THE MUSEUM OF STUFFED PASTA
When I created this place I wanted to give homage to the excellence of Italian gastronomy, which characterizes in a strong way the Emilia: the stuffed pasta.
I arrived in this zones many years ago from Puglia I knew some examples of stuffed pasta from the regions of south, but here this food have its more hight expression.
I traveled the Emilia far and wide for listen to the stories of sfogline and view the skilful gestures of their hands. I tasted foods unknown to me, I discovered the traditionals recipes and I recreated my trip in these rooms.
Every city, every village of this amazing region has its own stuffed pasta: I wish you have the opportunity to taste them all and to experiment at least one time the art of learn the kneading the flour with the egg and transform the feedstock that the earth offers us in a king plate, because the stuffed pasta its the art and the culture of the territory.
